The Foodservice Option
Not making the profits you need selling to stores? Why not try selling to foodservice? Chain restaurants, hospitals, schools, resorts, cruise ships, etc., all need qualitry items for their menus. And, your revenues will add up a lot faster, for example, selling a distributor like Sysco a pallet of 4x1 gallon cases of your product, than being limited to selling a few retail size cases at one stop.
Either way, there is likely a world of progress that can be made on both sides of the specialty foods fence. Sure, it's mostly trial and error, but the results can be well worth it.
